Grapes from the Sellicks Beach area of McLaren Vale are always among the first to ripen in the McLaren Vale.
They were picked in a very ripe state and fermented in open vats, with extended maceration prior to a gentle squeeze in a hand operated basket press.
This was followed by maturation in a mixture of new and old French and American oak.
The wine is a blend of grapes from several different growers in the Sellicks Beach and Willunga area.
We recommend that you open the bottle an hour or so before drinking and let the wine “breathe” before pouring. The wine received a light egg fining and minimal filtration. A big McLaren Vale red!
